Sussex Gourmand thins are the perfect base for tasty canapés and snacks. Hand-crafted super-thin, with organic butter and a blend of three organic flours, including wholegrain, their unique triangular shape makes creating attractive bites a doddle. They’re full of flavour, yet subtle enough to let the topping shine.

Our seaweed and dill seed thins were created for seafood toppings, so here are ten of our favourites:

#1 At its simplest, just dipped in taramasalata – deeeelicious! Even better, make your own and pipe it on, then finish with fresh parsley.

#2 With smoked mackerel pate. Top with chives, or if you really want to impress, add mock caviar and edible flower petals…. the one featured here is edible pansies.

#3 Topped with fresh crab and mayonnaise (take it easy on the mayo – you just need enough to hold it together!) and black pepper.

#4 With a smoked salmon rose, filled with salmon caviar – to make a smoked salmon rose, cut a strip of smoked salmon about 10cm long by 3cm wide and roll up, then put onto the thin and push the centre to open it out. Top with salmon eggs.

#5 Spread with cream cheese, topped with smoked trout and a snipping of fresh chives.

#6 With a dab of watercress mayonnaise (chop up a handful of fresh watercress and add to the mayo) and hot smoked trout pieces.

#7 Topped with brown shrimp with a hint of marie rose sauce (per pack of brown shrimp, about a tablespoon of mayonnaise, a teaspoon of tomato ketchup and a dash of Worcester Sauce. Add a dash of tabasco if you like things spicy.

#8 With a dab of creamy horseradish sauce, topped with any smoked fish…. eel, tuna or salmon.

#9 With a piped star of smoked salmon or smoked trout pate.

#10 Surprise! A non-fish option. With Seven Sisters cheese from the fabulous High Weald Dairy. A semi-soft matured sheep milk cheese, coated in a layer of Hebridean seaweed.
