Our two delicious, award-winning, artisan cured, smoked and air-dried meats. Perfect for salads, snacks and charcuterie boards. Each 50g pack contains enough meat for 24 canapés, starters for four people, or a main course salad for two. The perfect addition to any charcuterie selection and of course, a low-fat, high protein snack that’s ideal for people following a low-carb, low fat or paleo diet!
Our Sussex native breed grass-fed beef is cured with hand harvested sea salt, foraged berries, gin, fresh organic herbs and spices. We smoke it gently before air-drying it to perfection, then slice it thinly and carefully vacuum pack it to maintain its top condition. Our Wild venison bresaola is made in the same way, but with a different blend of herbs and spices to create the perfect flavour. and was dubbed ‘outstanding’ in the Great Taste Awards.
This is not like supermarket bresaola. It has a much more complex flavour profile, which is down to the small batch production, our very own recipe, honed over time for taste perfection and top quality ingredients. We don’t use additives (nitrites or nitrates) to preserve our meats, which are regularly lab-tested for micro-bacterial quality, consistently delivering excellent results.
