We first cure the venison with salts, hedgerow berries, spices, Sussex gin (Slake Hedgerow) and organically grown herbs, then it’s lightly smoked and air-dried to perfection.
It was ranked ‘outstanding’ in the Great Taste Awards 2017 and featured on BBC’s Top of the Shop with Tom Kerridge.
