Our Sussex native breed grass-fed beef is cured with hand harvested sea salt, foraged berries, gin, fresh organic herbs and spices. We smoke it gently before air-drying it to perfection, then slice it thinly and carefully vacuum pack it to maintain its top condition.
This is not like supermarket bresaola. It has a much more complex flavour profile, which is down to the small batch production, our very own recipe, honed over time for taste perfection and top quality ingredients. We don’t use additives (nitrites or nitrates) to preserve our meats, which are regularly lab-tested for micro-bacterial quality, consistently delivering excellent results.
Sussex Beef has ranked highly for its quality since the 18th century. Grazing maintains the South Downs landscape and wildlife, making grass-fed, naturally reared Sussex beef a really good choice of meat. And what better way to enjoy it than this superb bresaola.
